Veggie Burger

Need Food Processor

1 c chopped onions
2 c sliced mushrooms
2 tsp veg oil
1 Tbsp soy sauce
1 c cooked instant brown rice
2 Tbsp chopped parsley
1 c shredded fontina cheese
1 ½ c soft bread crumbs
1 egg
1 cup diced tomato
¼ tsp salt (optional)
Pinch of black pepper
Tomato salsa on top

Under Broiler
Sauté onion and mushroom in oil until soft for 8 minutes
Add soy sauce and cook 2 minutes
Remove to small bowl
Finely chop in processor rice, onion mixture, parsley and cheese until finely chopped
Combine with bread crumbs egg, tomato, salt and pepper

Shape into patties – can be made 24 hours ahead
Remove 20 minutes before broiling

Broil 6 inches from heat 4 minutes per side (until Crusty)
