Fruit Pizza

1 1/2 cups magerine or butter
1 cup powdered sugar
3 cups flour
1 8oz cream cheese (softened)
1/2 cup sugar & 3/4 cup sugar
1 ts. vanilla
1 ts. lemon juice
2 Tbs corn starch
1 cup pineapple juice or other fruit juice
fruit *

* suggestions: bluberries, pineapple, oranges, peaches, apples, strawberry, kiwi, bananas, grapes (seedless), etc..



In large bowl, beat margarine on medium until softened
Beat in powdered sugar
Slowly beat in flour until combined
Spread dough into bottom of 12 inch pizza pans makes 2 pizzas
Bake at 325F for 30 minutes or until edges are lightly browned  cool crust
In small bowl, beat together cream cheese, 1/2 cup sugar, vanilla and lemon juice
Spread cream cheese mixture over cooled crust
In sauce pan, combine juice, cornstarch, 3/4 cup sugar.
Cook over medium till thickened and bubbly, cook 1 minute more and cool slightly
Spread fruit over cream cheese layer on crust
3/4 cup sugar
3 cups of desired fruit *

Spread fruit over cream cheese layer on crust
Spoon cooled glaze over glaze
Refrigerate

Nutritional analysis: 528 calories, 326 mg sodium, 30 g fat, 21 mg cholesterol
Serves: 12-16
